Frozen Yogurt

Strawberry Frozen YogurtUse either fresh or frozen raspberries or strawberries to make this delicious low-calorie family treat!

Yield: 4 servings

Ingredients:

  • 1 tsp/5 mL  unflavoured gelatin
  • 1⁄4 cup/60 mL  skim milk
  • 3 cups/750 mL  fresh or frozen berries
  • 2 tsp/10 mL  lemon juice
  • 3/4 cup/200 mL plain low-fat yogurt

Instructions:

  1. Soften gelatin in milk in a heatproof measuring cup 5 min; set the cup in a pan of hot water; stir until gelatin dissolves.
  2. Purée the berries in a blender container or food processor until smooth; strain into a medium bowl; stir in lemon juice, yogurt and gelatin mixture.
  3. Cover with plastic wrap; place bowl in freezer and freeze 1 - 1.5 h or until almost set; remove and whirl in a blender container or food processor until smooth; return to freezer and freeze 4 h or until just firm.
