Berry Bruschetta

Fresh berries and Brie cheese make a delightful combination forBerry Bruschetta a light brunch!

Yields: 6 - 8 servings

Ingredients:

  • 1  unsliced loaf French or Italian bread
  • 1 lb/500 g  Brie or Camembert cheese
  • 3 cups/750 mL  strawberries (or other favourite berries), washed & hulled
  • 1/4 cup/60 mL  Demerara sugar
  • 2 tbsp/30 mL  finely chopped fresh mint or fresh coriander

Instructions:

  1. Preheat oven to 3500F (1800C).
  2. Slice loaf in half lengthwise. Thinly slice cheese and evenly cover cut bread halves.
  3. Thinly slice berries and scatter evenly over cheese. Sprinkle each half with 2 tbsp (25 mL) Demerara sugar.
  4. Place on a cookie sheet and bake in the centre of oven for 10 to 12 minutes or until cheese is melted and begins to bubble.
  5. Remove from the oven and sprinkle with chopped mint.
