Berry Bruschetta
Fresh berries and Brie cheese make a delightful combination for
a light brunch!
Yields: 6 - 8 servings
Ingredients:
- 1 unsliced loaf French or Italian bread
- 1 lb/500 g Brie or Camembert cheese
- 3 cups/750 mL strawberries (or other favourite berries), washed & hulled
- 1/4 cup/60 mL Demerara sugar
- 2 tbsp/30 mL finely chopped fresh mint or fresh coriander
Instructions:
- Preheat oven to 3500F (1800C).
- Slice loaf in half lengthwise. Thinly slice cheese and evenly cover cut bread halves.
- Thinly slice berries and scatter evenly over cheese. Sprinkle each half with 2 tbsp (25 mL) Demerara sugar.
- Place on a cookie sheet and bake in the centre of oven for 10 to 12 minutes or until cheese is melted and begins to bubble.
- Remove from the oven and sprinkle with chopped mint.
