Blueberry Streusel Muffins
This is a unique muffin wherein the same ingredients are used for both the batter and the streusel. A little hint of cinnamon spices things up just nicely.
Ingredients:
2 ½ cups all purpose flour- 2 cups blueberries
- 1 ¼ cup sugar
- 1 cup butter
- ¾ cup milk
- 2 eggs
- 1 tbsp baking powder
- 1 ½ tsp vanilla
- ½ tsp ground cinnamon
Instructions:
- Preheat oven 350°F. Grease 18 muffin cups.
- Combine the flour, sugar and baking powder. Cut in the butter until crumbly.
- Set aside ¾ cup of this mixture to be mixed with the cinnamon for topping.
- Sitr the milk, eggs and vanilla together, then add into the remaining flour mixture.
- Fold in the blueberries
- Spoon the batter into the muffin liners and sprinkle the cinnamon mixture evenly over the muffin tops.
- Bake for 30-35 minutes.
