Sugar-Free Strawberry Jam

A great sugar-free jam recipe for diabetics or those wanting to avoid sugar. Makes a larger batch. Calls for strawberries but can be made with any fruit.
Yield: 3 cups
Ingredients:
- 1 1/2 tsp/8 mL unflavoured gelatin
- 1 1/2 tbsp/23 mL cold water
- 3 cups/750 mL fresh strawberries (hulled & mashed)
- 1 1/2 tbsp/23 mL liquid sweetener
- 1/4 tsp/1.25 mL ascorbic acid powder
- red food colouring (if desired)
Instructions:
- In a cup, soften gelatin with water and set aside.
- Combine mashed strawberries and sweetener in a medium saucepan.
- Place over high heat, stirring constantly until mixture comes to a boil.
- Remove from heat; add softened gelatin.
- Return to heat and continue to cook 1 minute.
- Remove from heat, blend in ascorbic acid powder and food colouring.
- Pour into freezer containers.
- Cover. Store in refrigerator or freezer.
