Sweet Cornmeal Strawberry Surprise Muffins

A unique recipe that combines the delicious taste of sweet cornbread with our favourite, strawberries!
Yields: 12 - 15 muffins

Ingredients:
- ¾ cup (175ml) cornmeal
- 1 ¼ cups (300ml) Buttermilk (can also substitute 2 % milk)
- 2 cups (500 ml) all-purpose flour
- 2 tsp (10 ml) baking powder
- ½ tsp (2 ml) baking soda
- ¼ tsp (1 ml) salt
- ½ tsp (2ml) chilli powder
- 2/3 cup (150 ml) granulated sugar
- 1 egg
- ½ cup (125 ml) plain yogurt (not fat free)
- ¼ cup (70 ml) liquid honey
- ¼ cup (50 ml) margarine or butter (melted)
- 1 tsp (5 ml) vanilla
- Strawberry Jam to fill middle (the surprise !!)
Directions:
- Pre-heat oven to 375˚F (190˚C)
- Oil a 12 cup nonstick muffin tin or line with paper liners
- In a medium bowl combine cornmeal and butter milk, and let sit for a couple or 3 minutes.
- In a large bowl combine flour, baking powder, baking soda, salt and chilli powder.
- Whisk sugar, egg, yogurt, melted butter, honey and vanilla into the cornmeal and milk mixture.
- Pour the milk mixture over the dry ingredients and stir until moistened.
- Fill muffin tins about ½ full, then spoon 1 tsp of strawberry jam into the centre of each tin, then add the remaining batter over top of the jam.
- Sprinkle a little chilli powder over top of each muffin.
- On the centre rack of the oven, bake for approx 17 - 20 minutes or until tops of muffins are firm to the touch. Check with toothpick, should come out clean.
Prep time: 10 -15 minutes
Tip: Recommend you use plain yogurt not fat free when baking.
