Strawberry Rhubarb Jam

Ingredients:
- Strawberries
- Rhubarb
- Sugar
- Jam Mix (Certo)
- Several stems of fresh mint
Instructions:
- Depending on how big a preparation I am making, I prepare and mix about 2/3 strawberries and 1/3 rhubarb in a large pot.
- Add appropriate amount of sugar and let sit about 30 minutes.
- Start cooking the jam mix. I never add thickeners. What makes this jam very special is adding several washed stems of fresh mint.
- I leave the leaves on the stem and remove them when the jam is cooked down to the correct consistency.
The resulting jam has a marvellous flavor.
