Raspberry Peach Cobbler

Remember back to visit's to Grandma's house and the welcoming smell of a fresh cobbler wafting in the air to greet you. You can invite those smells and the delicious taste home with this old fashion Raspberry Peach Cobbler recipe.

Ingredients:

  • 2 cups of sliced peaches
  • 2 cups of Heeman's Raspberries
  • 1 cup of white sugar
  • 2 Tablespoons of corn starch
  • 1 - 1/2 cups of water

Crust

  • 1 cup of whole wheat flour (or white/wheat blend)
  • 1 cup of quick cook oats
  • 1 cup brown sugar
  • 1 teaspoon of cinnamon
  • 1/2 cup cold butter cut into chunks

Instructions:

  1. Preheat oven to 350 Degrees
  2. In a saucepan, add peaches. Pour in white sugar and water. Bring to a boil, stirring often. Once boiling, remove 1/4 cup of liquid from saucepan and mix with corn starch until smooth. Add the cornstarch mixture to the saucepan, stirring continually until mixture thickens. Turn down heat and allow to simmer for two or three minutes. Remove from heat and stir in your Heeman's raspberries. Don't mix too hard or you'll disintegrate the berries.
  3. Pour into an oven proof bowl.
  4. In a separate bowl, mix flour, cinnamon, oats and sugar until well blended. Cut in the butter using a pastry blender or two knives until the mixture is crumbly. Butter should be about the size of peas.
  5. Cover the peach/berry mixture with the crust mixture. Bake for approximately 30 minutes or until crust is browned.
  6. Serve warm with vanilla ice cream or fresh whipped cream.

Tip:

  • This recipe is also delicious with a tea biscuit topping. For a shortcut, you could use Bisquick. Just add cinnamon and follow biscuit directions on box.
