Frozen Raspberry Yogurt Sandwiches

Frozen Raspberry Yogurt SandwichYields: 9 sandwiches

Ingredients:

  • 4 cups (1 L) frozen vanilla yogurt
  • 3 cups (750 ml) raspberries
  • 18 graham cracker* squares, divided

*Substitute graham crackers for chocolate wafers for a different taste.

Instructions:

  1. Soften frozen vanilla yogurt by placing in a large bowl; break up and stir with spoon but do not allow melting. Fold in raspberries.
  2. Arrange 9 of the graham crackers in an 8-inch square pan.  Spread yogurt-raspberry mixture over crackers.  Cover with remaining 9 crackers to make sandwiches.
  3. Freeze until firm and cut into squares.

This is a great recipe to make substitutes; sliced strawberries, peach pieces, blueberries or your favorite fruit can be used and ice cream or frozen non-fat yogurt instead of regular yogurt.
