Cheese Potato Puffs

Ingredients:

  • cheese potato puffs recipe4-5 lbs  potatoes cooked and mashed
  • 6 tbsp/90 mL  butter
  • 2-1/4 cup/625 mL  cheddar cheese grated (we use light version)
  • 1 1/4 cup/292 mL  milk
  • 3/4 – 1 tsp/4-5 mL  salt
  • 2  eggs

* Approximately 8 cups/2 L when mashed

Instructions:

  1. Add all ingredients to mashed potatoes.
  2. Beat well and put in a greased 13-9” pan.
  3. Bake at 350°F for 30 to 45 minutes until brown on top and puffy.

** If in doubt on measurement for potatoes a helpful tip is 3 medium potatoes equal 1 lb/2 cups cooked and mashed. Also, if you wish to cut down on butter, add a little more milk and cheese to offset texture required for mixing.
