“Instant" Blueberry Sherbert

Ingredients:

Easy Berry Flan

  • 2 cups frozen blueberries
  • 1/2 cup milk
  • 1/3 cup maple syrup or sweeten to taste
  • * (honey or sugar can also be used)

Instructions:

  1. Place blueberries in food processor (should use one that will chop ice).
  2. Add milk and maple syrup and process immediately. (Do not allow liquid to set as it will freeze and processor will not be able to puree fruit.) May have to add a little extra liquid if too thick to process.
  3. Serve immediately . . . a delicious refreshing dessert for a hot summer day or a refreshing close to any meal!
  • Other fruits such as strawberries, raspberries or peaches may be used. I like to add a touch of cinnamon to peaches and also have added in 1/3 to 1/2 cup yogurt too for a creamier result.  A complimentary fruit juice can also be substituted for the milk.
  • An added bonus to this recipe is that it can be poured into popsicle molds and frozen (minimum 3 hours) for an energizing, nutritional treat for family, friends or teammates since it is so thirst quenching!
